mmmm....Chocolate!



Ever have those nights where you just have a craving for something sweet?? That was tonight for me and after looking through my Donna Hay Flavors for our dinner recipe (see post below) I saw these chocolate cookies and couldn't resist. Besides, I had all the ingredients and as soon as hubby saw the picture, he was all over it! He wanted to make them together, so that's how these cookies ended up on my blog tonight :)




We only made half the recipe because I didn't have enough butter, but we still ended up with quite a few cookies and these are so rich, you only need one or two! This is like a chocolate explosion in your mouth. Also, the recipe says to place 1/4 cup of batter for each one and this seemed like it was going to make enormous cookies, so we halved each ball to make smaller, more manageable ones.

They are not the prettiest looking cookies, but by golly, they taste fabulous. Hubby gave a big grin of approval too....we managed to satiate his cookie cravings (and mine) for at least another night :)




Donna Hay's Chocolate Cookies
(Makes 18)

8oz butter
1 tsp vanilla extract
1 1/2 cups brown sugar
2 eggs
2 cups plain flour
1 tsp baking powder
1/2 cup cocoa powder
1/2 cup desiccated coconut
8oz dark chocolate, chopped

1. Pre-heat oven to 315F. Place butter, vanilla and sugar in mixer and beat until creamy. Beet in the eggs and then stir through the flours, baking powder, cocoa, coconut and chocolate.

2. Place level 1/4 cupfuls of mixture on baking trays lined with non-stick baking paper and bake for 12-15 minutes or until the bases are lightly browned. Serve the cookies warm or cold.
